Mojito Grilled Chicken

Ingredients:
- 1.5-2 lbs boneless, skinless chicken breasts
- 1/4 cup white rum
- 1/4 cup vegetable oil
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro, finely chopped
- 1/4 cup fresh mint, finely chopped
- 2 tbsp brown sugar
- 1 tbsp red wine vinegar
- 1 tbsp honey or agave
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Method:
- Place chicken in a large zip top bag or shallow baking dish.
- Whisk together remaining ingredients in a small bowl until combined.
- Pour marinade over chicken and refrigerate for at least 30 minutes.
- To prepare, remove chicken from marinade and place on a preheated grill.
- Cook over medium-high heat for about 5-6 minutes per side, or until cook.
- Serve with rice or Salad.
