Pork Chilli

Ingredients:
- 1 ½ pounds boneless pork loin roast, cut into 1-inch pieces
- 1 tablespoon chili powder
- 2 cloves garlic, minced
- ½ teaspoon ground chipotle chile pepper (optional)
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- 1 tablespoon canola oil
- 2 14.5 ounces can no-salt-added diced tomatoes, undrained
- 1 15 ounce can no-salt-added black beans, rinsed and drained
- 1 8 ounce can no-salt-added tomato sauce
- 1 cup frozen whole kernel corn
- 1 medium mango, halved, seeded, peeled, and chopped
- ¼ cup snipped fresh cilantro
- ¼ cup red onion
Instructions:
Prep: 20 mins
Slow-Cook:
4 hrs to 5 hrs (low) or 2 to 2-1/2 hours (high)
- In a medium bowl combine pork, chili powder, garlic, ground chile pepper (if using), cumin, and salt; toss to coat.
- In a large nonstick skillet heat oil over medium-high heat.
- Cook half of the pork in hot oil until brown on all sides, stirring occasionally.
- Transfer to a 3-1/2- or 4-quart slow cooker.
- Repeat with the remaining pork.
