Lychee Martini

Ingredients:
- 1 (20-ounce) can lychee fruit
- 2 ounces crushed ice
- 3 ounces lychee liqueur (recommended)
- 2 ounces vodka
- Splash lime juice
- Splash Champagne
Method
Pour can of lychee fruit into a strainer. Reserve 30ml lychee juice.
In a shaker, add crushed ice, lychee liqueur, vodka, lime juice and reserved lychee juice.
Shake well. Pour mixture into chilled martini glasses over a few pieces of lychee fruit from the tin.
Add a splash of Champagne and serve.
