Laughter in the Rain Cocktail

Ingredients:

• 1 piece (1 inch) peeled cucumber, chopped
• 2 ounces organic vodka, preferably Rain
• 1/2 ounce peach liqueur, preferably Mathilde
• 1/2 ounce freshly squeezed lemon juice
• 1/4 ounce Simple Syrup for Mixed Drinks
• 1 strip lemon zest
• 1 strip cucumber peel

Method:

• Shake all ingredients over ice and strain into a chilled cocktail glass.
• Garnish with lemon zest and cucumber peel.
